What to do with all this Jam…Make Spritz Cookies

Look out people. I’m not in a good mood and packing heat. That’s right, if you have something to say about it I’ll shoot you with my cookie gun.  As Judith Viorst once wrote…Today is a terrible, horrible, no good very bad day…I’d like to throw the word rotten in there too! The perfect day to make something beautiful. Bah humbug, enjoy!

 Spritz Cookies

1 ½ C real butter

1 C sugar

1 egg

2 T milk

1 t vanilla

1.5 t almond extract

3 ½ C flour

1 t baking powder

favorite jelly or jam

Preheat oven to 375. Thoroughly cream butter and sugar. Add egg, milk, vanilla, and almond extract. Beat well. Stir together flour and baking powder. Gradually add to creamed mixture, mixing to make a smooth soft dough. Use a cookie gun or roll dough into a small 1″ balls and make and indention using your thumb or the end of a wooden spoon. Using a syringe or pastry bag pipe your favorite jelly or jam into the indention.  Bake 8-10 minutes on an ungreased cookie sheet.  Remove cookies from sheet and cool. 

Makes 7-8 dozen cookies.

  1. brilliant! i was just thinking jam thumbprints the other day (omg, just realized i had been thinking about xmas already!). love the use of the syringe for intricate piping needs–damn, i wish i’d thought of it. i’m a nurse, after all. good work!

    I have never put jam in the center when I make spritz. I usually just sprinkle them with colored sugars before baking. I will have to make some with jam as well next time. Thanks for the idea.

    What kind of cookie gun do you have? Do you bake a lot of cookies? Do you sell your cookies?

    I’m a recreational baker. I mostly do breads, but I’ve been doing a lot of cookies lately… and thinking about investing in a cookie gun. It just seems to make every cookie come out so beautifully…. I would greatly appreciate any thoughts you have on cookie guns.

  6. I love mine…I got it for only $9 at my local grocery store. “Comfort Grip Cookie Press“. The Brand is Wilton. I’ve had people email me and say they have had trouble but mine always works like a charm! The dough recipe I posted is pretty much no fail. Make sure the REAL butter is at room temp. and do not chill dough and you should be fine! I’d love to know how things turn out! Thanks so much for the visit Huck!

    Bad news, Megan. My adventuring into Spritz Cookie Making brought about the worst cookie disaster in the history of mankind. They were the most hideous things imaginable… not at all the cute, crisp cookies in your picture… but fat, crumbly blobs. They did taste good, though!

    I wonder if my cookie dough was too soft? Should I have tried to freeze or chill it first? The weather here is really humid… maybe that did it. Or maybe I’m just terrible at cookies (like I said previously, I’m a wiz when it comes to breads… but don’t have much experience with the cookies)

    I also had trouble getting them to pop out of the cookie gun and stick onto my cookie sheets.

    ANY advice you could give would be great. I really want to master these. They’re too cute.

  10. Oh no Huck! The recipe I posted says to use the dough at room temp and not to chill… I’v had lots of people tell me they have problems with their cookie press… Mine is a plastic wilton. Maybe this link will help:
